Preheat Your Pan: Place a non-stick skillet or griddle over medium-low heat. You can also use a regular skillet, but make sure to grease it with a little oil or butter.
Prepare the Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
Prepare the Wet Ingredients: In another bowl, whisk together the buttermilk (or buttermilk substitute), milk, egg, and melted butter.
Combine Wet and Dry Ingredients: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. It's okay if there are a few lumps; overmixing can make the pancakes tough.
Cooking the Pancakes: When your skillet is hot, ladle the pancake batter onto the skillet. Use about 1/4 cup of batter for each pancake. This will give you a good-sized pancake.
Cook Until Bubbles Form: Cook the pancake until you see bubbles forming on the surface and the edges start to look set, usually around 2-3 minutes.
Flip the Pancake: Carefully flip the pancake with a spatula. Cook for an additional 1-2 minutes, or until the pancake is golden brown on both sides and cooked through.
Serve: Remove the pancake from the skillet and keep warm. You can place them on a plate in a warm oven (around 200°F or 93°C) while you cook the remaining pancakes.
Repeat: Continue making pancakes with the remaining batter. If the skillet starts to get too dry, you can add a little more oil or butter.
